Thanksgiving in New York City!


















Holidays are always good for creating new memories and new experiences. Thanksgiving was a new experience for Anissa and I, as we adventured off to the island of Manhattan to experience New York City during the holidays! We took in a lot of fun thinks around the city and we got to see the wonderful small town of Redbank New Jersey. We celebrated Thanksgiving in New Jersey with Anissa's cousins, Johnny and Jacqueline as well as other members of the Knierim family. We took off on Thanksgiving from NYC via the NJ Transit Train to the coastal town of Red Bank, NJ. We all stuffed ourselves with turkey and all of the great sides that goes along with thanks giving.

This was my first time in the NYC and Anissa's 2nd time. We both loved the fast pace, sights and sounds that come along with 9 million people and millions of things to do in a few quick days! Some of the highlights of the week in the NYC: 2 broadway shows: Billy Elliott, Wicked , The Rockettes' Christmas show in Radio City Music Hall, FAO Schwartz on black friday, Little Italy, the Pickle Guy, Central Park, Macy's Day Parade, New York Pizza, Trains & Subways, a "Night at the Museum" Museum, a black tie and perils birthday/anniversary party and of course long delays at the airport. We look forward to future adventures in the city that never sleeps.

Emmy's First Birthday!



During October we traveled to Akron, OH to see our nieces, Emerson & Adeline! We celebrated Emmy's 1st Birthday while we were there. Emmy enjoyed her cake (with a fork) and all her presents! Brian bought Emmy a golf set, so he can teach her golf. After the mini lesson in the living room she really was excited to play! Our Nan, Uncle Jeff, Aunt Linda, cousins Lori & Lisa, and their children Grant, Audrey, and Lauren all attended! We enjoyed being in Ohio and seeing our family!

I made this out of a black wreath and strung candy corn!

Shepherd's Pie

I love to share recipes. Brian really enjoyed this meal. This picture is a small portion of what was left over after I filled the 9 by 9 baking pan. I did not want to throw it out, so I made a small amount extra. This recipe is good and not too difficult! Enjoy!

Shepherd's Pie Recipe

1 1/4 lb. red potatoes, cut into chunks
3 large cloves garlic, peeled
3/4 c. sour cream
1/2 c. sharp shredded cheddar cheese
1 lb. lean ground beef
2 Tbsp. flour
4 c. frozen mixed vegetables
3/4 c. beef broth
2 Tbsp. ketchup

1. Place potatoes and garlic in large sauce pan; add enough water to cover. Bring to a boil. Reduce heat to low; simmer 20 min. or until potatoes are tender. Drain; return to saucepan. Add sour cream; mash potatoes until smooth. Stir in 1/4 cup of cheese.

2. Preheat oven to 375 F. Brown meat in large skillet. Stir in flour; cook 1 min. Add vegetables, broth and ketchup; cook 5 min. Spoon in to corning ware baking dish; cover with potatoes.

3. Bake 18 min.; sprinkle with remaining 1/4 c. cheese. Bake and additional 2 min. or until cheese melts. May want to turn broiler for 2 or 3 minutes.

Painting the Hallway & Stairways



This weekend we started painting the hallways & staircases. What I mean when I say "started" is it is going to be a long process...we have a couple of high ceiling and stairways that will be hard to paint. The color is Lenox Tan. Brian & I enjoy doing are own home projects, so we thought we would show you the results so far! We will let you know when we finish the project!
